Persimmons

The Bountiful Baskets message board has a really good article about persimmons. We got the Fuyu variety. They are good for salads. The Hachiya is good for pulp recipes - like breads or cookies. Check out the forum for some interesting facts. - Diane

Romaine & Strawberry Salad

Dressing:
1 c. oil
3/4 c. sugar
1/2 c. red wine vinegar
2 cloves garlic, minced
1/2 tsp. salt
1/4 tsp. pepper

Combine dressing ingredients and chill. Pour over salad just before serving. (I think this makes enough for 2 salads.)

Salad:
1 lb. Romaine lettuce
1 pt. strawberries, sliced
1 c. shredded jack cheese
1/2 c. toasted pecans

In case you are having trouble figuring this site out, you will need to post your recipe idea as a "comment". After you comment, I will copy and paste it in as a new posting so the title will be available to make the recipes easier to find.

Also, there is a great recipe sharing place on the Bountiful Baskets website under the "message board" located on the left sidebar of the main page. I hope you will find some good recipes between the two sites. :)

Glazed Carrots With a Twist

1 lb. carrots, peeled and cut on the bias 1/4 inch thick
2 T. butter
Heavy pinch of salt
1 c. ginger ale
1/2 tsp. chili powder

In a 12 inch saute pan over medium heat, combine the carrots, butter, salt and ginger ale. Cover and bring to a simmer. Once simmering, remove the lid, stir, and reduce the heat to low. Cover again and cook for 5 minutes. Remove the lid, add the chili powder and increase the heat to high. Cook, tossing occasionally, until the ginger ale is reduced to a glaze, approximately 4 - 5 minutes. Pour into a serving dish. Serve immediately.

Hi there! I love taking part in the Bountiful Baskets Produce Coop, but I found myself hunting down new recipes to try with some of the things that I don't ordinarily buy. I heard other people saying the same things at the last pick up, so I thought it would be fun to create a place to share the recipes we've found and liked. Please use this blog only to share recipes!
